RECIPE IDEA

SAUSAGE & RATATOUILLE
WITH POLENTA

1 (16-ounce) package prepared polenta
1 medium yellow bell pepper, cut into thin strips
1 small onion, thinly sliced
1/2 teaspoon minced garlic
1 teaspoon olive oil
1/2 small unpeeled eggplant, cubed (2 cups)
8-ounces Heartland Fields™ Italian-Style Soy Sausage, thawed
1 medium zucchini, halved lengthwise and sliced 1/4 inch thick
3 large plum tomatoes, cut into wedges
1 teaspoon dried oregano

1. Cut polenta into 12 slices. Prepare according to package directions. Cover and keep warm.

2. For ratatouille: Meanwhile, in large nonstick skillet, cook yellow pepper, onion, and garlic in hot oil over medium heat for 3 minutes, stirring frequently. Add eggplant; cook for 5 minutes, stirring frequently.

3. Stir in soy sausage, zucchini, tomatoes, and oregano. Cover and cook for 5 to 7 minutes more or until vegetables are crisp-tender, stirring occasionally.

4. Serve ratatouille over polenta. Sprinkle with finely shredded Parmesan cheese, if desired.

Makes 6 servings.
