RECIPE IDEA

STUFFED BELL PEPPERS WITH BASIL SCENTED BEEF AND POTATOES

3 large yellow bell peppers
1 (20-ounce) package refrigerated shredded Southwestern-style hash brown potatoes with peppers
6 green onions, bias sliced into 1/2-inch pieces
10-ounces Heartland Fields™ Soy Beef Crumbles, thawed
1/2 cup coarsely shredded carrot
2 to 3 tablespoons chopped fresh basil
1 (8-ounce) carton plain fat-free or low-fat yogurt
1/2 cup coarsely shredded unpeeled cucumber

1. Preheat oven to 350°. Halve bell peppers lengthwise; discard seeds and membranes. In large saucepan, cook in boiling water for 5 minutes or until crisp-tender. Drain peppers well. Place peppers, cut side up,
on baking sheet.

2. For filling: Generously spray large nonstick skillet with nonstick cooking spray. Preheat over medium heat. Add hash browns and green onions; cook and stir over medium heat for 10 minutes. Stir in Soy Beef Crumbles, carrot, and basil.

3. Spoon filling into peppers; loosely cover with foil. Bake for15 minutes or until heated through.

4. For sauce: In small bowl, combine yogurt and cucumber. To serve, spoon sauce onto serving plates. Place stuffed peppers on top of sauce.

Makes 6 servings.
